Many of us need affordable meal ideas! I now realize my egg bake recipe may not fall into that category unless of course you have your own chickens. A bag of potatoes can go a long way. However there have been times I’ve been stumped as to what to make beyond a baked potato. There are some other feasible options such as potato soup, french fries, or a creamy Au Gratin. This Au Gratin recipe was well enjoyed by my family. I hope yours enjoys it as well! This serves about 8 people, you can cut the ingredients in half to serve 4

Just pulled from the oven

Ingredients:

6 potatoes

1.5 yellow onions

3.5 cups milk

6 tbsp butter

6 tbps flour

1/2 tbsp salt

1/2 tsp pepper

1/2 tbsp garlic powder

1.5 tsp oregano

1 tbsp soy sauce

1 tbsp minced garlic

3 cups colby jack blend cheese

Instructions:

Use small amount of butter to grease your casserole dish

Wash and peel potatoes & onion

Mix all seasonings into a bowl and set aside (pepper, salt, oregano, garlic powder, minced garlic, soy sauce)

Slice the potatoes and onions thinly (approx 1/4 inch)

Layer 1/2 the potato & onion into baking dish beginning with potato

Make sauce in medium saucepan:

Melt butter in sauce pan on low- medium heat

Add the flour slowly while whisking continually (make sure none sticks, or cakes to bottom of pan)

Slowly add milk to sauce pan

Add all premixed seasonings (pepper, salt, oregano, garlic powder, minced garlic, soy sauce)

Slowly mix in cheese stirring continually until all is melted

Pour half of the sauce over potato & onion that is in the casserole dish

Layer the remaining potato & onion into the casserole dish

Top with remaining sauce:

Cover with foil

Bake at 400F for 90 Min

(use caution when removing the foil as there will be hot steam)

  1. Love this!!! Definitely making this tonight. I love how the ingredients are staples in our kitchen and almost always readily available. We always buy potatoes, and I just planted some this week.
    Excited to see how it turns out!
