This is one of my favorite go to meals for anytime of the day!
It’s high protein, full of veggies, affordable, and kid friendly.
This recipe was plenty for 4 adults and 3 kids. You can easily cut the ingredients in half to feed fewer people. Also you can replace the veggies listed below with any you have on hand. Mushroom & spinach are some of my favorite alternatives (picture included)
INGREDIENTS:
14 eggs (farm free, or organic pasture raised is preferred)
1/2 stick of real butter
2 cups cheese (colby jack blend or cheddar)
1 cup milk
bunch of asparagus
1 small yellow onion
can of diced tomatoes
1 tsp of minced garlic
2 1/2 tbsp of salt
1 tbsp of garlic powder
balsamic vinegar (optional)
INSTRUCTIONS:
Preheat oven to 375 F
Lightly sauté onion and asparagus (until asparagus is bright green) and let cool
Melt butter and put into large casserole baking dish
Add eggs to casserole dish and stir well
Add all additional ingredients to baking dish and stir well
Mix cooled veggies into baking dish
Bake for 45 minutes
Cool for approx. 7-10
Enjoy! (optional: serve with balsamic vinegar)
